A Nutritious and Easy Soup Recipe for Seniors: Creamy Tomato and Basil Soup

As we age, it’s important to enjoy meals that are easy to prepare, nutritious, and soothing to our bodies. A warm bowl of homemade soup can offer comfort and provide essential nutrients. One such recipe that is both simple and delicious is Creamy Tomato and Basil Soup. It’s a great option for seniors because it’s easy to digest, packed with vitamins, and full of flavor.

Why Tomato Soup for Seniors?

Tomatoes are rich in antioxidants, particularly lycopene, which is great for heart health. The addition of basil not only enhances the taste but provides anti-inflammatory properties, which can help seniors manage arthritis and other joint-related issues. The creamy texture of the soup makes it soothing to eat, especially for those who might have difficulty chewing or swallowing.



Ingredients

  • 2 tablespoons of olive oil

  • 1 medium onion, finely chopped

  • 2 garlic cloves, minced

  • 4 cups of low-sodium vegetable broth

  • 4 cups fresh tomatoes, chopped (or 2 cans of diced tomatoes)

  • 1 teaspoon dried basil (or 1 tablespoon fresh basil, chopped)

  • 1 teaspoon sugar (optional, helps balance acidity)

  • ½ cup heavy cream or milk for creaminess

  • Salt and pepper to taste



Instructions:

  1. Prepare the vegetables:

Start by heating the olive oil in a large pot over medium heat. Add the chopped onion and garlic. Cook until they are soft and translucent (about 5 minutes).


  1. Cook the tomatoes:

Add the chopped fresh tomatoes or canned tomatoes to the pot. Stir in the dried basil, and allow the mixture to simmer for about 15-20 minutes, letting the tomatoes break down and become soft.


  1. Blend the soup:

Once the tomatoes are cooked through, use an immersion blender to blend the soup directly in the pot until smooth. If you don’t have an immersion blender, carefully transfer the soup to a regular blender in batches.


  1. Add the broth:

Pour in the vegetable broth and bring the soup to a simmer. Let it cook for another 10 minutes allowing the flavors to meld together.


  1. Finish with cream:

Stir in the heavy cream (or milk for a lighter version) and add salt and pepper to taste. For a slightly sweeter taste, you can add a teaspoon of sugar to balance the acidity of the tomatoes.


  1. Serve

Ladle the soup into bowls and garnish with fresh basil leaves. You can also sprinkle a little grated parmesan cheese on top for extra flavor.
